1983: the creation of the winery by Noëlle and Jean-Claude Biot who took over the exploitation of 4.5 ha.
1985: first vineyard plantations
1987 – 1999 slow increase of the area of the estate to reach 10 ha
2007: installation of Clément Biot, graduate in viticulture enology who succeeds his retired parents.

Where: Chitry-Le-Fort, 89530. “Located 12 km from Auxerre (known for its famous football team: AJA), at the floor of a valley dominated by vineyards and cherry orchards, Chitry-Le-Fort is a town in the canton of Chablis. Built in the XIII ° century, its fortified church, classified historical monument, is at the origin of the current patronym of our village. We currently maintain 12 .5 ha of vineyards on the hillsides of Chitry and those of Chablisien. The kimméridgien limestone marls give all their typicity to the white wines resulting from the vines Aligoté and Chardonnay who express themselves at their truest in Chitry. Some well-exposed plots, planted to Pinot Noir, produce elegant and fruity red wines. “

Vineyards: Total surface: 12.5 ha spread over the following plots: 2 ha of Chardonnay in Burgundy Chitry, 1 ha of Chardonnay in Chablis, 7 ha of Aligote, 2.5 ha of Pinot Noir.

Cellar: The essential stages of winemaking are: destemming, pressing, maceration and fermentation.
Alcoholic fermentation, the main phase of winemaking, is a natural phenomenon in which grape sugars are converted into alcohol by the action of yeasts. This transformation is accompanied by a release of carbon dioxide. After pressing, the wine is then clarified, stabilized, and then aged. Depending on the type of wine elaborated, the period of aging will be more or less long.
It allows the wine to blossom by slow evolution. At the end of it, the wine is filtered before being bottled.
